Vegan Broccoli Salad

                                                                                             Vegan Broccoli Salad 

Ingredients

1 lb or 2 heads of chopped fresh broccoli 
⅔ cup dried cranberries 
½ cup crumbled vegan bacon
⅓ cup diced red onions

Dressing
¾ Cup of Vegan Mayonnaise 
1 Tablespoon of Monk Fruit sweetener (or sweetener of your choice)
¼ Teaspoon pepper to taste

Instructions
  1. Combine chopped broccoli florets, dried cranberries, vegan bacon, and onions in a large bow and set aside.
  2. In a separate, small bowl, whisk together vegan mayonnaise, sweetener, and pepper until smooth.
  3. Pour dressing over broccoli combination and stir well.
  4. For the best flavor, refrigerate for at least one hour before serving, and make sure to toss broccoli salad thoroughly again before serving, and ENJOY! 
 Note: You can add ½ cup salted sunflower seeds if desired. You can make this recipe “regularly” by adding real bacon and real mayonnaise.
It tastes great either way!

Cajun Crab Bisque

Ingredients
1-diced celery stock
1/3 cup diced yellow onion
2-Cloves of minced garlic
2-tablespoons of butter
2-tablespoons of liquid crab boil
1- Small bag of frozen corn (DO NOT USE CANNED)
1-can of coconut cream
½- Can of full fat coconut milk
½- Cup of chicken broth
4 - tablespoons of Worcestershire sauce
Pink Himalayan Sea Salt and Cracked Black Pepper to taste

Fresh crab meat or shrimp is optional

Instructions

  1. Add diced onions, celery, and garlic to deep pot along with crab boil oil and 1 tablespoon of butter. Stir over medium heat until onions are translucent.
  2. Then add corn and stir for at least 2 minutes to turn in flavor
  3. Next, pour in chicken broth and let simmer for 5 minutes.
  4. Next add the entire can of coconut cream, and half a can of full fat coconut milk, and bring mixture to a boil.
  5. Add Worcestershire sauce and butter and continue to let soup boil.
  6. Add salt to taste and black pepper to taste.
  7. Garnish with fresh chives and enjoy!
 
TIP: IF YOU WANT TO FULLY ENJOY THIS BISQUE, PLEASE LET THIS SOUP COMPLETELY COOL BEFORE SERVING! ALL THE FLAVOR WOULD HAVE FUSED TOGETHER, AND IT WILL THICKEN NATURALLY AND BEAUTIFULLY.

Quarantine Chicken Spaghetti

Ingredients

1 Whole rotisserie chicken
3 Tablespoon of butter  
4 bags of Shirataki noodles
2 Cloves of fresh minced garlic
2 ½ cups shredded sharp Cheddar
1 Cup of freshly shredded or Shaved Parmesan cheese
1 Cup of fresh sliced mushrooms
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
16 Ounces of Heavy Whipping Cream
1/2 teaspoon of Himalayan Sea salt
1/2 teaspoon of freshly ground black pepper
1/2 Freshly diced jalapeno (whole if you want your dish spicier) 
 
Instructions

1.     Preheat oven to 350°

2.     Pull apart your entire rotisserie chicken

3.     Prepare Shirataki Noodles according to package instructions, drain and then set aside.

4.     In a large skillet over medium heat, melt 1 tablespoon butter. Add mushrooms, bell peppers, and jalapenos. Then season with salt and pepper. Cook until mushrooms are mostly tender, 4 to 5 minutes, then add chicken.  Cook, stirring occasionally,  until chicken is lightly golden.

5.   Add garlic to chicken and cook until fragrant, 1 minute more. Then transfer mixture to a large bowl. 

6.     Return skillet to medium heat and melt remaining 2 tablespoons butter, cheese, and slowly add heavy cream so you won’t make dish too watery (you don’t have to use the entire container).

7.     Bring sauce to a simmer over medium heat, stirring occasionally and allowing sauce to thicken, about 10 minutes. 

8.     Add pasta and chicken mixture to skillet and toss to combine.

9.     Place mixture in medium glass casserole dish.

10.  Sprinkle with Parmesan cheese and bake for about 25 minutes or until sauce is bubbling.

​11.  Remove from over, let stand for 15 minutes, serve and ENJOY!

Chicken Crusted Pizza

Ingredients 
  • 1 lb ground chicken breast, boneless and skinless
  • ½ cup Grated Parmesan cheese
  • 1 cup shredded nonfat mozzarella cheese
  • ½ tsp garlic powder
  • 1 dash salt
  • 1 dash ground black pepper
  • ½ tsp (ground) oregano
  • ½ cup tomato sauce, no added sugar
  • 1 tsp crushed red pepper flakes
  • 4 leaves chopped basil, fresh
  • 16 slices of Turkey Pepperoni
Instructions
  • Preheat oven to 450°F and line a baking sheet or pizza pan with parchment paper.
  • In a medium bowl combine the ground chicken with ¼ cup Parmesan, ¼ cup mozzarella, ¼ tsp oregano, garlic powder, salt, and pepper.
  • Put chicken mixture onto the parchment paper and pat into flat rectangle or disc. Cover with plastic wrap and evenly press or roll the chicken into a 7x10" rectangle or round using a rolling pin. Remove the plastic wrap and roast until golden, 12-15 minutes or until desired crispness.
  • Spread sauce on crust, and top with remaining cheese and oregano, turkey pepperoni slices, and crushed red pepper flakes (to taste).
  • Place back into the hot oven and cook until melted and bubbly 6 to 10 minutes.
  • Remove from oven and top with chopped basil. Divide into 8 slices, serve and enjoy!

Low Carb Apple Fritter Bake

Cinnamon Rolls 
  • (1 1/2 cups) shredded mozzarella 
  • (3/4 cup) almond flour (extra fine) 
  • 2 tbsp cream cheese
  • 1 egg room temperature
  • 1/2 tsp baking powder
Filling:
  • 2 tbsp water
  • 2 tbsp granulated sweetener
  • 2 tsp cinnamon
Frosting:
  • 2 tbsp cream cheese
  • 1 tbsp plain full fat Greek yogurt 
  • 2 drops vanilla extract
Instructions
  1. Melt the mozzarella and cream cheese in a non-stick pot over a low heat or in a microwave (1 1/2 minutes, stirring halfway through). Make sure the cheese is melted, 
  2. Stir in the egg.
  3. Now add the almond flour and baking powder. Start to combine using a fork, then use your hands to make a ball of smooth dough. This can be easier if you lightly oil your hands first.
  4. Divide the dough into 6 balls (About the size of tennis balls)
  5. Form long rolls, then flatten out with your hands. Make the dough as thin as you can.
  6. Prepare your cinnamon filling: boil water, then stir in the sweetener and cinnamon.
  7. Spread the cinnamon paste over the flattened dough rolls.
  8. Roll each into a bun and cut sideways in half.
  9. Now you have 12 buns which you place on a non-stick baking sheet or in a pie dish.
  10. Place cinnamon rolls in the freezer for at least 30 minutes. 

Apple fritter bake 

Ingredients

1 Can of  “No Sugar added apple pie filling” 
½ Cup of melted butter
1/3 Cup of Swerve brown sugar sweetener 
2 level teaspoons of cinnamon

Instructions
  1. Pre-heat oven to 350 degrees 
  2. Remove cinnamon rolls from freezer and cut them into 4-6 pieces, then place in a medium mixing bowl 
  3. Open the can of apples and chop them up into small bite sized pieces.
  4. Place the cinnamon rolls, apples, melted butter, Swerve, and cinnamon in a bowl and mix them until everything is combined and the cinnamon rolls are coated in the apple mixture.
  5. Spray a large casserole dish with cooking spray and then pour the cinnamon rolls and apples into the dish and place in the middle rack of the oven and bake for 40 minutes or until cooked through.
  6. Drizzle the frosting over the top of the casserole.  Serve warm and enjoy!

THANKSGIVING LEFTOVER IDEAS

Turkey

  • Pulled Turkey BBQ Nachos- Prepare your turkey the same way you would prepare shredded BBQ Chicken. Use pork skins instead of tortilla chips. Melt cheese and top with your favorite coleslaw. 
  • Creamy Turkey taco soup- My Creamy Chicken taco soup recipe just replace chicken with Turkey. 
  • Turkey lettuce rolls- Turkey and cheese wrapped in bibb lettuce dip in Ranch Dressing. 
  • Turkey and Green bean casserole- Prepare your green bean casserole regularly just add leftover turkey meat and  extra cheese.  
  • Buffalo Turkey dip- Prepare just like buffalo chicken dip except with turkey. 
  • Turkey Tetrazzini- Prepare like Chicken Tetrazzini just replace spaghetti noodles with Shirataki noodles.  
    • Turkey Caesar salad- Romaine lettuce, freshly shredded parmesan and caesar dressing. 

Cranberry Sauce 
  • Cranberry topped keto cheesecake 
  • Cranberry sauce with plain greek yogurt 
  • Keto Pancakes topped with Cranberry sauce syrup 
  • Cranberry sauce meatballs (if you have done this with grape jelly they will work the same way)
  • Cranberry sauce on top of your favorite French Brie 

Ham
  • Ham and cheese lettuce rolls
  • Ham and egg muffin bites
  • Ham and cheddar broccoli soup
  • Ham and cabbage 

Cauliflower Mash
  • Shepards pie- Replace mashed potatoes with cauliflower mash 
  • Loaded Cauliflower mash- Add shredded cheese, sour cream, leftover ham, and chives

Garlic Mashed Cauliflower

Ingredients

1 head cauliflower, cut into florets or 1 bag of rice cauliflower
1 Tablespoon of butter
4 Cloves of minced garlic
½ Cup of FRESH grated Parmesan cheese
1 Tablespoon reduced-fat cream cheese
¼ Cup of heavy whipping cream
½ Teaspoon Himalayan sea salt
½ Teaspoon freshly ground black pepper
1 Teaspoon of chives for garnish


Directions

1. Add cauliflower to large pot of boiling water. Boil cauliflower until tender, about 10
minutes.
2. Meanwhile, heat the butter in a small skillet over medium heat. Cook and stir the garlic
until fragrant. Remove from heat and set aside.
3. Return to your boiling cauliflower, remove from heat. Then drain the water and half at a
time in a blender or food processor blend on high. Add remaining cauliflower in blender
slowly until cauliflower is creamy.
4. Turn mixture into you pan with the cooked garlic, then add parmesan cheese, stir until
cheese is melted, cream cheese, whipping cream, salt, and black pepper.
5. Stir until cauliflower is at your desired consistency, and add more salt or pepper if you
desire.
6. Garnish with green onions...SERVE AND ENJOY

            Tip: You can also add bacon, cheddar cheese, sour cream and chives, and make a loaded mash!

Cranberry Sauce

Ingredients
12 ounce bag of frozen or fresh cranberries
2/3 cup Diet cranberry juice cocktail 
3 Cinnamon sticks 
Half of a fresh orange 
1 teaspoon of sweetener of choice (optional) 

Directions 
  1. In a large saucepan add cranberries and juice cocktail, then bring mixture to a simmer.  
  2. Next squeeze out the juice from your orange into the mixture and add in cinnamon sticks.
  3. Continue to cook on low for no less than 15 minutes. The cranberries should burst open. 
  4. Stir occasionally, the longer the mixture cooks the more the cranberries will break down. 
  5. Add sweetener if you want your sauce sweeter
  6. Remove from the stovetop, and allow your sauce to cool. Then transfer the sauce to a bowl, cover and chill in the fridge until you are ready to serve.

                   TIP: You can replace Cranberry juice cocktail with water, if you don’t want your sauce as tart!

DARIUS COOKS KETO CORNBREAD

Darius Cook’s Keto Southern Style Cornbread


INGREDIENTS

2 cups Almond Flour
1/4 cup Coconut flour
3 tsp Baking powder
1 tsp of Kosher salt
3 large eggs
1/2 cup butter, melted
1/4 cup sour cream
1/3 cup of monk fruit sweetener

DIRECTIONS 
Start by preheating the oven to 350 degrees.
Then, in a large bowl, combine the flours, baking powder, and salt. Then mix in the eggs, butter, sour cream, and monk fruit sweetener. The batter will be thick, don’t worry, it’ll bake up perfectly.
Place the batter in a cast iron skillet that’s been buttered and floured and then bake for 20-25 minutes or until golden brown. Spread butter all over the cornbread when it comes out of the oven and let it cool slightly before cutting.

Pumpkin Pie

Pumpkin Pie 

INGREDIENTS

1 Almond flour pie crust (Pre made)
1 15-oz can Pumpkin puree
1/2 cup Heavy cream 
2 Large eggs 
2/3 cup Powdered erythritol or Swerve Brown Sugar sweetener
2 tsp Pumpkin pie spice
1/4 tsp Sea salt
1 teaspoon Vanilla extract 
1 Teaspoon of Pumpkin pie spice 
1 Teaspoon of cinnamon 

DIRECTIONS
  1. Let your pie crust bake for about 10 minutes before using. Then allow the crust to cool on the counter for at least 10 minutes or longer.
  2. While your crust is cooling In a large bowl add all ingredients and mix them all together using an electric mixer until smooth. 
  3. Pour the filling into the crust, and gently tap your pie on the counter to release air bubbles.
  4. Place pie in the middle baking rack and bake on 350 degrees for about 45 minutes, until the pie is almost set but still slightly loose in the center...THIS IS OK!
  5. Remove pie from oven and let your pie set and cool completely on the counter.
  6.  Refrigerate at least an hour before slicing. 
  7. Serve and ENJOY
                                                       Tip: Serve with your choice of whipped topping!
