2- Leg quarters or breasts from a cold rotisserie chicken 1- Teaspoon of butter 8oz- Heavy whipping cream 1- Packet of regular taco seasoning 1- Can of rotel tomatoes with green chilies 1- Can of chicken broth 1-Cup of water ½ Cup of chopped white onions ½ Cubed avocado for garnish 1- Teaspoon sour cream for garnish 1- Tablespoon of shredded Mexican Cheese for garnish 1- Lime wedge
1. Remove skin from cold rotisserie chicken and pull meat off bones. 2. Combine cold chicken and onions in a large pot. 3. Add butter and cook chicken and onions until onions are translucent. 4. Pour in water and taco seasoning, then bring mixture to a boil 5. Next add chicken broth, and rotel tomatoes in. Continue to boil for another 5-7 minutes. 6. Lastly pour in heavy whipping cream and cook covered for 10 minutes stirring occasionally. 7. If desired garnish with, sour cream, cheese, avocado, and a squeeze of juice from a lime wedge.
