Low Carb Apple Fritter Bake

Cinnamon Rolls 
  • (1 1/2 cups) shredded mozzarella 
  • (3/4 cup) almond flour (extra fine) 
  • 2 tbsp cream cheese
  • 1 egg room temperature
  • 1/2 tsp baking powder
Filling:
  • 2 tbsp water
  • 2 tbsp granulated sweetener
  • 2 tsp cinnamon
Frosting:
  • 2 tbsp cream cheese
  • 1 tbsp plain full fat Greek yogurt 
  • 2 drops vanilla extract
Instructions
  1. Melt the mozzarella and cream cheese in a non-stick pot over a low heat or in a microwave (1 1/2 minutes, stirring halfway through). Make sure the cheese is melted, 
  2. Stir in the egg.
  3. Now add the almond flour and baking powder. Start to combine using a fork, then use your hands to make a ball of smooth dough. This can be easier if you lightly oil your hands first.
  4. Divide the dough into 6 balls (About the size of tennis balls)
  5. Form long rolls, then flatten out with your hands. Make the dough as thin as you can.
  6. Prepare your cinnamon filling: boil water, then stir in the sweetener and cinnamon.
  7. Spread the cinnamon paste over the flattened dough rolls.
  8. Roll each into a bun and cut sideways in half.
  9. Now you have 12 buns which you place on a non-stick baking sheet or in a pie dish.
  10. Place cinnamon rolls in the freezer for at least 30 minutes. 

Apple fritter bake 

Ingredients

1 Can of  “No Sugar added apple pie filling” 
½ Cup of melted butter
1/3 Cup of Swerve brown sugar sweetener 
2 level teaspoons of cinnamon

Instructions
  1. Pre-heat oven to 350 degrees 
  2. Remove cinnamon rolls from freezer and cut them into 4-6 pieces, then place in a medium mixing bowl 
  3. Open the can of apples and chop them up into small bite sized pieces.
  4. Place the cinnamon rolls, apples, melted butter, Swerve, and cinnamon in a bowl and mix them until everything is combined and the cinnamon rolls are coated in the apple mixture.
  5. Spray a large casserole dish with cooking spray and then pour the cinnamon rolls and apples into the dish and place in the middle rack of the oven and bake for 40 minutes or until cooked through.
  6. Drizzle the frosting over the top of the casserole.  Serve warm and enjoy!
